Позже он приезжал снова и снова и, наконец, открыл в Лондоне первый bacaro Polpo – ресторанчик, в котором  подают местные молодые яркие вина и готовят простую и вкусную пищу, какой бы не постыдился коренной венецианец. Другими словами, перед вами как бы Polpo на бумаге: душистое рагу из кролика, теплый салат с уткой, спаржа с пармезаном и анчоусным маслом, медовое семифреддо, бэби-пиццы, лингвини с моллюсками, морские гребешки с лимоном и мятой – всего 140 рецептов непритязательной, но ужасно вкусной кухни по мотивам венецианских впечатлений.

    Tucked away in a back street of London's edgy Soho district, POLPO is one of the most irrepressibly buzzing restaurants in town. Critics and food aficionados have been flocking to this understated bacaro where Russell norman serves up dishes from the back streets of Venice. A far cry from the tourist-trap eateries of the famous floating city, this kind of cooking is unfussy, innovative and exuberantly delicious. The 120 recipes in the book include caprese salad, zucchini fries, asparagus with Parmesan and anchovy butter, Jerusalem artichoke salad with radicchio and truffle oil, pumpkin risotto, rabbit cacciatore, warm duck salad with beets and walnuts, crispy baby pizzas with zucchini, mint and chilli, scallops with lemon and peppermint, mackerel with parsley salad and smoked almonds, linguine with clams, whole sea bream, warm octopus salad, soft-shell crab in Parmesan batter with fennel, walnut and honey semifreddo, tiramisu, panacotta with poached rhubarb, warm autumn fruits with amaretto cream, ricotta and chocolate crumble, fizzy bellinis and glasses of bright orange spritz.

    With luminescent photography by Jenny Zarins, which captures the unfrequented corners, the bustling bacari and the sublime waterways of Venice, POLPO is a dazzling tribute to Italy's greatest hidden cuisine.
